Banana Apple Coconut Curry Soup
Ingredients:
- 2 bananas, sliced
- 2 14.5 oz cans diced tomatoes
- 1 sweet onion, diced
- 6-8 cloves garlic, crushed
- 5 tablespoons curry
- 2 teaspoons cumin
- 2 teaspoons salt
- 4-6 bay leaves
- 2 Granny Smith apples, finely diced
- 2 cans coconut milk
- 2 Green Peppers, diced
- 5-6 teaspoons parsley
- 1/2 – 1 cup water (if needed)
Instructions:
- Add all ingredients to a crockpot or cook on low on stovetop for 4-6 hours.
- Enjoy!
