Homemade Granola Recipe by Karen Totino

Karen Totino, Licensed Real Estate Person at Monticello Real Estate Person has a favorite granola recipe that friends and family rave about. This recipe is a great go-to snack when she is on the road or in between appointments. It’s healthy, and it wards off the hunger pains!

It’s low-carb, low-sugar and gluten free!

Healthy Granola Recipe:

Ingredients:
2 packages pecans
1/4 ghee, butter, coconut oil
1/4 cup swerve sweetener
2 tsp cinnamon
1 package of large flaked coconut unsweetened-bob’s red mill
1 cup pepita (pumpkin) seeds
1 cup sunflower seeds
1/2 cup Lily’s dark chocolate chips
Himalayan salt to taste

Proportions can be modified based on preference. For instance – you can add less coconut and more seeds.
Coat pecans in 1/4 cup ghee, butter or coconut oil and sprinkle with swerve sweetener and cinnamon. Toast in 350-degree oven for about 10 minutes.
Toast coconut in oven as well until edges are golden brown about 5-7 min (keep a close eye!)
Toast seeds in oven for about 5 -8 minutes
Mix together and salt to taste let cool before adding chocolate chips.
