Banana Apple Coconut Curry Soup

Caitlin Montalvo, Associate Broker, and her husband have been eating a plant based diet for more than a year. She said that ever since they started their vegan diet, they have both noticed a significant difference with their health.
This vegan recipe is one of Caitlin’s favorite fall and winter go-to recipes.
Banana Apple Coconut Curry Soup
Ingredients:
  • 2 bananas, sliced
  • 2 14.5 oz cans diced tomatoes
  • 1 sweet onion, diced
  • 6-8 cloves garlic, crushed
  • 5 tablespoons curry
  • 2 teaspoons cumin
  • 2 teaspoons salt
  • 4-6 bay leaves
  • 2 Granny Smith apples, finely diced
  • 2 cans coconut milk
  • 2 Green Peppers, diced
  • 5-6 teaspoons parsley
  • 1/2 – 1 cup water (if needed)
Instructions:
  • Add all ingredients to a crockpot or cook on low on stovetop for 4-6 hours.
  • Enjoy!
